After spending 27 years working with one of the top pizza chains in the world, I began to investigate the growing demand for gluten free products. My initial thought was "this is a trend. It will not last". My research led me to Celiac Disease, gluten sensitivity, and the limited dining options when it came to maintaining a gluten free diet. I discovered that 1 in 7 people worldwide are gluten sensitive, and that doesn't even take into account the vast number of people who simply choose a gluten free diet because it just makes them feel better. Take a look at our logo. The heart illustrates that Gluten Free is a healthier way to eat. The contents represented within the heart illustrate that people worldwide are increasingly choosing a gluten free diet. Finally, for those of you not versed in Italian, the ribbon represents my Italian heritage, and the name Senza Glutine is Italian for Gluten Free.
